Class 1 - Traffic Light Eating


Chicken Salad Wraps:

2 cans chicken (10-12 oz cans) or fresh cooked and shredded or cut into chunks
8 ounces plain, low-fat yogurt
1 pound red grapes
Romaine lettuce leaves

Drain canned chicken. Wash grapes and cut into halves or quarters. Combine chicken and yogurt in a bowl and mix well. Add cut grapes into the mixture and mix. Place a clean, dry piece of lettuce on a plate and fill with ½ cup of mixture. Roll lettuce around mixture to make a roll. For older children, hold lettuce closed with a fancy toothpick.

Class 2 - Brainy Breakfast


Banana Burrito:

Bananas
Whole wheat tortillas
100% natural peanut butter {I use Almond Butter}
100% fruit spread (or honey) {I use Agave Nectar}

Spread 1 Tablespoon of peanut {almond} butter on one side of a tortilla. Spread 1 Tablespoon of 100% fruit spread {or drizzle of honey or Agave Nectar} over the peanut butter. Place the banana at the edge of the tortilla and roll it up. For fun you can cut the banana burrito into bite size pieces using toothpicks to keep each piece wrapped.

Class 3 - Fruits and Veggies


Fun Fruit Dip:
1 cup low fat vanilla yogurt*
2 Tablespoons frozen 100% juice concentrate
Try orange, apple-cranberry, strawberry-kiwi, or use your favorite flavor

*recommended brands: Mountain High and Horizon

Combine yogurt and 100% fruit juice in a bowl and mix well.

Fresh Cut Fruit:(you choose your favorite) apple slices, mango slices, blueberries, cantaloupe, strawberries, honeydew, kiwi slices, watermelon, banana slices, papaya, mandarin orange slices

Class 4 - Skinny on Fat


Easy Guacamole:
2 small ripe avocados
bottled salsa

Mash avocados in a bowl with 2 Tablespoons of salsa. Serve with baked corn tortilla chips.

Be sure to read the food label on the tortilla chips package for the correct serving size (for example: 12 chips might equal one serving).

Homemade Tortilla Chips:
1 package corn tortillas
olive oil
sea salt

Preheat oven to 350 degrees. Brush each tortilla with oil. Cut into triangles and place on baking sheet. Sprinkle with sea salt. Bake 10-15 minutes until crisp. Dip in your favorite salsa.

Class 5 - Power up with Protein and Play


Cheese and Crackers:
Low moisture part skim mozzarella string cheese (individual 1 oz serving)
100% whole grain crackers

Serve one serving of whole grain crackers with one cheese stick per person. Be sure to read the food label on the cracker package for the correct serving size.

Cottage cheese sundae & celery spoon:
Low fat cottage cheese
canned crushed pineapple or bottled salsa
celery sticks

Top one scoop (1 serving) of cottage cheese with either crushed pineapple or salsa. Use the celery sticks for spoons.

Class 6 - Water your Growing Child


Fruit Salad Sundaes:
Bananas, sliced
seedless grapes, washed and cut in half
strawberries, frozen
pineapple chunks, canned
mandarin oranges, canned
peaches, canned
nonfat or low-fat yogurt
almonds, chopped or slivered
dried cranberries

Drain canned fruit. Combine all fruit in a large bowl. Toss fruit then spoon into sundae or parfait glasses. Top with a scoop of yogurt and garnish with almonds and cranberries.

Optional - Fruit Salad Sundae Bar:
Serve fruit, yogurt, and toppings in small bowls and have family create their own sundae. Any fruit can be substituted, these are just suggestions.

Celebration Soda:
Bottled sparkling water
100% fruit juice concentrate (cranberry, apple, or orange)
Place 1 teaspoon of the 100% fruit juice concentrate in a glass. Add 8 oz of chilled sparkling water, stir, and serve. {Small drizzle of agave nectar, optional}
